Korean bamboo salt, called jukyeom (죽염), is sea salt that has been packed into bamboo stems, sealed with clay and roasted over a pine-wood fire. The roasting gives it a rounder, more savory taste than plain salt, and the more times it is roasted, the deeper and more sulfurous the flavor becomes. Here is how the grades differ and how to use each one in the kitchen.
How is Korean bamboo salt made?
Sun-dried Korean sea salt is packed into bamboo, the open end is sealed with clay, and the stems are fired over pine wood. The bamboo burns away and leaves a hard pillar of salt. For the 9x grades, that salt is crushed, packed into fresh bamboo and fired again, nine times in all. K-LAVA salts are made this way by Insanga (인산가) in Hamyang, Korea, under HACCP certification.
1x vs 9x vs purple bamboo salt: what is the difference?
| Grade | Roasting | Look | Taste | Good for |
|---|---|---|---|---|
| Versatile 1x, 1 kg bag | Once | Fine powder | Mild, clean | Everyday cooking, brining, pickling |
| Original 9x (powder or crystals) | Nine times | Grey-white | Savory, light sulfur note | Seasoning and finishing |
| Purple 9x, jajukyeom (powder or crystals) | Nine times, hottest final roast | Purple | Bold, strong sulfur note | Finishing salt, a pinch in water |
Purple bamboo salt (jajukyeom, 자죽염) gets a final firing hot enough to melt the salt like lava. It cools into hard purple crystals, and the color forms in the fire; nothing is added. For a budget everyday option there is also hwangto bamboo salt powder, roasted in bamboo with loess clay.
Why does bamboo salt smell like eggs?
A sulfur aroma, often compared to boiled egg yolk, develops during the high-heat roasting. It is normal for genuine 9x bamboo salt and is strongest in the purple grade. It is not a sign of spoilage. The note is most intense when salt touches the tongue directly and much softer once it is dissolved in food or water, so new users often start there.
How do you use bamboo salt?
- Cooking: use it in place of table salt in soups, stews (guk and jjigae), namul, marinades and dressings. The fine powders dissolve in seconds.
- Finishing: crush a few crystals over steak, fried eggs, salad or roasted vegetables just before serving.
- Dipping salt: mix with sesame oil and black pepper for Korean barbecue.
- Brining and pickling: the once-roasted 1 kg bag suits salt-heavy jobs like kimchi cabbage and pickles.
- Salted water: dissolve a small pinch, about 1/8 tsp, in a glass of water.
The roasted flavor is fuller than table salt, so start with a little less and adjust to taste.
Is bamboo salt different from regular salt in sodium?
Not really. Bamboo salt is still salt. One 1/8 tsp serving provides 170 to 230 mg of sodium (7 to 10% of the Daily Value), depending on the grade, so count it toward your daily sodium. Choose it for its flavor and tradition, not as a way to cut salt.
Why is 9x bamboo salt so expensive?
Each of the nine firings takes fresh bamboo, clay, pine wood and many hours, and the salt is made in small batches. A once-roasted bag costs a fraction of the price and works well for daily cooking, while the 9x grades are mostly used a pinch at a time for their deeper flavor.
Bamboo salt beyond the salt jar
Bamboo salt also shows up in Korean pantry and bathroom staples: Ilkwang bamboo salt candy is a sweet-and-salty hard candy with 2% bamboo salt and a toasty nurungji flavor, and bamboo salt toothpaste is a fluoride-free paste made with 9x roasted bamboo salt.
Before you use it
If you are pregnant or nursing, take any medication, or are under medical care, consult your healthcare provider before use. Enjoy in moderation. Purple crystals are hard; keep all salt out of reach of children.
